Nutritious, Delicious Muffin Recipe

Preheat oven to 350 degrees.

Combine:
1 1/2 cups freshly ground flax seed. (You can use a coffee grinder)
1 cup freshly ground raw pumpkin seed
1/2 cup all purpose flour
3/4 cup wheat bran or wheat germ
[Mix the above thoroughly in large bowl]

In a separate bowl thoroughly mix:
2 teaspoons vanilla
3 teaspoon cinnamon
1teaspoon ground ginger
1 teaspoon salt
1 tablespoon baking powder
1 teaspoon nutmeg
8 large eggs
12 oz can of evaporated milk
3/4 cup pure maple syrup
1/8 cup brown sugar
1/2 cup of olive oil or coconut oil

Combine all above ingredients into one bowl and add:
1 cup dried cranberries
1 cup dried prunes chopped into at least 4 pieces, or dried blueberries.
2 1/2  cups black walnuts

Place 24 regular size cups into muffin pans. Spray with olive oil. Fill cups and place in oven, preheated to 350 degrees, for 20 minutes or until slightly brown. Allow to cool, then place in a container and keep refrigerated until consumed.
